Is there any marks on the frame ?

If it's the Wilsonia twin gauge that fits into the dash it's just Amps and Oil Presure

It would be great if you could get a Fuel and Water Temp for the other side of the dash in the same shape

Wonder if it's possible to adapt / make one

Would the steak knifes be new or second hand, what brand are they & would they come in a knife block, I am very interested

First off ,Pete i've had this gauge over 20yrs,i'm can't say if it'll work or not,the steak knives are a Freebie,if your not happy with the frame,they are easy to swap over,the glass and lettering is xclnt.
Secondly,Andrew the knives are a DanosDirect item that come with a 12mnth warranty,they come with a wooden knife block that weighs a ton,but if you can afford the postage i'll send it.
Gary, good idea it doesn't have to work it just has to look right.I've got my oil,temp,fuel gauges on a hinged panel under the dash,i can see whats goin on while i'm driv'n,when i pull up,i can just pushem up [hidden] and the dash looks factory,PS ,did you tight'n up that handbrake cable?
