I used a rod-shop tunnel, plenty of other people modify the existing tunnel if the gearbox isn't too big or go for cut-out from another car. Cut-outs have other advantages like shifter and handbrake mounts if you are going that way.
The other consideration is carpet, with the rod-shop tunnel you can use FB/EK Auto carpet for an off-the-shelf item, otherwise you have to go custom 3 piece.

I used an entire front floor from an EK auto - from the seam in the firewall to the seam under the front seat and unpicked from the sills at the sides. It fits exactly into place in the FE with no bending, cutting or shaping needed and the end result looks like a factory auto in the FE. There are no weld lines and the rear gearbox mount can be built into the original EK auto chassis.
I consider it to be the ultimate tunnel swap if you want a factory smooth look without having to join a hump onto an existing floor.

We did the same Ken, and it is the ducks guts.

Back in 1989 we found a good complete EK Hydra-matic Wagon at a wreckers.

I told him I needed the entire wagon floor to be cut out, plus the Hydra box, radiator, drive shaft etc & all the other bits to convert our FC to Auto & he said "come back this arvo & pick it up"

So I did,

But where do you get em now, they are pretty thin on the ground these days.

You're right they are a little scarce nowadays. I think as far as recommending them as a useful swap was probably a poor idea since they are difficult to find.
