should I spray the whole under carriage or just inside wheel arches etc. What do I spray the under carriage with?

Depends on the finish you are after - a stocker should not be sprayed with any deadener except in the rear wheel arches - There is a small exception to some cars that had factory sound deadening.

All other types of vehicle can be sprayed with deadener at your discretion.

That's interesting Ken , the underside of my FE was absolutley covered with the stuff, up to 1/2 an inch thick in places. I wonder if that was part of the reason there was so little rust in the floor?   Dave

That sounds like "Proof-Kote", a fairly common sound deadener that was dealer-fitted. Good in theory, generally hopeless in practice, mainly because after a few bumps and scratches to it, the water could get between the Proof-Kote and the underbody of the car, and eat it away.

Plenty of cars that had well meaning first owners who swore by this practice, and subsequent owners have found their floor consists of rubber mat, underlay, and Proof-Kote...

Yes the FE cop car owned by Zulu also has the proof kote treatment. It does seem to have protected the floor pretty well on that vehicle though - as I remember there was only a tiny amount of rust to fix in the left hand front floor.
Maybe it depended on how it was installed or maybe the preparation. I have also seen some cars with terrible floors even though they had proof kote.

 I think the proof kote treatment worked well to stop the rust from the out side of the floor pan but in reality did little to stop the rust from forming on the inside and rusting through as we all know our cars were not that water tight and often left in the elements in there younger days ......FC427.......
