The middle covers stay in place. Just tap the Brake drum a little with a hammer and it will loosen enough to pull off.

You could bump the pressure up to 38PSI. Mine runs fine at that.

I think mine is similar to the 1 on the left just doesn't have the small plastic hose connection on it. Mine was a Nasco version, but I guess they bought them from another supplier. I will have to measure the size, its a little seized on the jar at the moment.
