Does anyone know if this is possible

Run a vacuum tank off the manifold and from the tank run 2 lines one for a power booster for the brakes and the other for the vacuum wipers?

Would this then mean that I could use a normal fuel pump and not the fuel/vacuum pump?

That would work OK, as long as you had stock or very mild camshaft to make sure the vacuum in the tank is replenished quickly, especially at idle.
