Just wondering if the bumper bars have to be riveted together or can I just bolt them together?

I think most people bolt them together.
By the time you find rivets or machine them up and then find something big enough to flatten them it would be easier to bolt them.

In saying that i would probablly file a square into them and use cup head bolts to bolt together.

I used M8 button-head socket head cap screws and nuts instead of rivets.  The advantage of bolts over rivets is that you can adjust the bumper sections for best fit, and then tighten all the nuts up.  Plus the lower profile of the button-head cap screws doesn't interfere with the overriders.

Thanks heaps, I'll go get some bolts. I wasn't really looking forward to using rivets. Thanks for your help.
