The great strip down started today, and there are FC parts from one end of the back yard to the other.

Which brings me to the topic of removing paint.

I'm thinking of having the body bead blasted underneath, inside cabin, boot and engine bay, but hand stripping the roof and quarter panels to prevent distortion.

The bolt on panels will probably be dipped.

Does anyone have any suggestion / recommendations / experience they can pass on regarding
a/ the best method for removing paint and body deadener
b/ Experienced bead blasters / dippers in the Sydney area.

Edward,  I think you have the perfect combination here.  I have done a couple of cars this way and apart from a few problems with beads getting into places where they are a bit hard to get out, all was good.  
Etch prime each area once it has been blasted or stripped to stop rust forming.

Thanks for the advice.

Is the etch primer you used a 1 pack or 2 pack product, and will it prevent rust forming, or moisture penetration until I'm ready to prime and paint (ie while the body mods take place), or does it need to be taken back to bare metal again?
