Can anyone please tell me (in as much detail as possible) how I can install and wire up an Air Chief valve radio into a fc holden.

I have a copy of the fitting instructions if you need them.
I think they run to about 6 pages.

I think Alex has a copy of the original fitting instructions for FE/FC that he might be able to scan and email for you.
Where'd you score a radio?
I've got an original set of Installation and Operating Instructions for the Air Chief Radio models JL and JM, but they're the generic, any vehicle radios, rather than the Holden-specific ones. There's heaps of detail in it though, (esp. the wiring and stuff like eliminating interference etc), so if you want to come around and borrow it, toddle on over!
